So tonight is the big casserole party… the casserole event of the year!

My friend Emily, who is possibly one of the coolest chicks on the planet, throws a great casserole bash every year. As it’s grown, so has her devotion to casseroles.

I’m looking to take the prize, with a special little dish I like to call MEXICAN BREAKFAST CASSEROLE.
